First course
Salmon marinated with black olives, cooked at low temperature,
yellow and orange beet, yellow carrot pickles

Foie gras terrine with Sauternes,
mango and cocoa tuile

Fish
Roasted pollack, leeks and cabbage,
beurre blanc sauce, served with caviar

Meat
Challandais duck with roasted blood, its confit legs and smoked potato purée,
black truffle sherry sauce

Pressé de Tatin,
